1974 240D 115 Brakes/rotors/bearings

I will be replacing the front and rear rotors, should I also replace the bearings and seals? or is there a way to inspect them first?

While I have the calipers off, should I rebuild them? or is these a way to inspect them first?

If your caliper rubber seals that you can see look good not torn or leaking I would not rebuild them for the sake of rebuilding them. but if your rotor is bolted to the hub the bearings will be in the hub and kinda come out anyway so why not clean and repack them they are out anyway. If the cage roller bearings look good after cleaning and are not loose or scared and the race is not scared up they are fine. If you decide to replace the bearings always replace the race too the two are machined for each other don't put in a new cage bearing in old race. I got tired of trying to pound out the race (use brass drift) and just scored it with a dremel tool with a cutting disc on two sides and it comes out much better faster easier. If your rubber brake hoses look even alittle worn cracked dry rotted replace those too they live a pretty hard life. I put stainless steel braided lines on and feel good about the choice.
